How it tastes
Nose
Fruit and freshly cut grass, with a clean perfume that recalls a walk through the grove.

A smooth start, with fruit, green apple, tomato and tomato plant, fig tree and almond appearing calmly one after another.

A touch of bitterness and a gentle pepper, just enough to stretch out the green memory of the oil.
The farm around the house of 1896
La Escalera is a small regenerative farm in Ontinyent, surrounded by nature. Olive trees and vines are grown organically there, among aromatic herbs and biodiversity, without pesticides or herbicides, with the care of people who know that oil begins in the soil.
Its oil brings together three varieties: Arbequina, small and fruity; Grossal, native to the area and very vigorous; and Changlot Real, discovered a century ago very close to the farm. Each 500 ml bottle holds the oil of just over 3,460 healthy green olives.
