Al Balata, in Extremadura

Al Balata makes organic oils in Extremadura, a land of dehesas, holm oak woods and wide olive groves where the countryside keeps much of its wildlife. Its trees are grown without pesticides or synthetic chemicals, and the olives are cold extracted.

Morisca is a native variety of the province of Badajoz, grown for centuries on the Guadiana plains and rare on the market today. It is the most intense of Al Balata’s single-variety oils. Bringing back native varieties like this one helps protect the diversity of Spanish olive growing, which for decades has concentrated on a few very productive varieties, and grown organically it shows its full potential.
