Around a historic house from 1896, in Ontinyent, a small and living farm grows. There, among aromatic herbs and biodiversity, La Escalera Organic is born: an extra virgin olive oil from regenerative, organic farming, without pesticides or herbicides.
Each 500 ml bottle holds the oil of just over 3,460 healthy green olives, a juice that contains nothing but what is extracted from them. La Escalera Organic brings three varieties into one voice: Arbequina, Grossal and Changlot Real.
It is an oil of fresh aromas, of fruit and grass, made for raw use and for dishes that welcome a last green touch.

A regenerative farm in the Vall d’Albaida
La Escalera is a small regenerative farm in Ontinyent, in the Vall d’Albaida, set around a historic house from 1896 surrounded by nature. Olive trees and vines are grown organically there, among aromatic herbs and biodiversity, without pesticides or herbicides.
The oil combines three varieties: Arbequina, small and fruity; Grossal, native to the area and very vigorous; and Changlot Real, discovered a century ago very close to La Escalera.
Where La Escalera Organic shines at the table
- Toast with tomato and a pinch of salt.
- Salads and roasted vegetables, dressed at the table.
- Rice dishes, with a final thread off the heat.
- Pan-seared fish and fresh cheeses.
- Soups and gazpacho, with a last drizzle on top.
A 500 ml dark glass bottle

The dark glass bottle protects the oil from light. It is a convenient size for daily cooking: half a litre to dress, finish dishes and carry the raw use for a few weeks.
Once opened, close it tightly after each use and keep it in a cool place, away from light and heat. Add La Escalera Organic at the end, off the heat, so its herbal freshness and its gentle peppery finish come through intact.
