In the Vall d’Albaida, in Ontinyent (Valencia), a house from 1896 surrounded by nature gives its name to a small, living farm: La Escalera. Olive trees and vines are grown organically there, among aromatic herbs and biodiversity, without pesticides or herbicides, and from that landscape comes an extra virgin olive oil that smells of freshly cut fields.

This case of 6 × 500 ml brings together six bottles of La Escalera Organic, three litres of an oil that blends Arbequina, Grossal and Changlot Real. It is the way to keep the farm’s oil at home for many months of cooking, serving and sharing.

Palate

Smooth and round, with fruit, green apple, tomato and tomato plant, fig tree and almond following one another without hurry.

Finish

It closes with a touch of bitterness and a gentle pepper that leaves the green, lively memory of the oil.

A regenerative farm in the Vall d’Albaida

La Escalera is a small regenerative farm in Ontinyent, set around a historic house from 1896. Olive trees and vines are grown organically, among aromatic herbs and plenty of biodiversity, without pesticides or herbicides. Caring for the soil and the life that lives in it is as much a part of the oil as the olive itself.

Three varieties sign the oil: Arbequina, small and fruity; Grossal, native to the area and very vigorous; and Changlot Real, discovered a century ago very close to the farm. Each 500 ml bottle holds the oil of just over 3,460 healthy green olives, a juice that contains nothing but what is extracted from them.

At the table with La Escalera

  • Toast with tomato and a thread of oil at the end.
  • Salads, roasted vegetables and rice dishes, added off the heat.
  • Grilled fish, with the raw oil poured over the top.
  • Fresh cheeses and seasonal vegetables.
  • Any dish that deserves a last touch of fresh grass.

A case of six La Escalera bottles

La Escalera, case of 6 × 500 ml

Six 500 ml bottles, three litres in total: the oil of more than 20,800 olives. It is a case for anyone who cooks every day with an organic extra virgin olive oil and does not want to run out, or to share between two households.

The bottles that wait stay closed, somewhere away from light and heat, and you open one at a time, so the oil that reaches the table keeps its freshness.
