As Pontis, in the Sierra de Gata
The As Pontis mill was born in November 2008 in Eljas, a village in the Sierra de Gata, in northern Extremadura, surrounded by chestnut and oak woods and terraced olive groves. From the start, its aim has been to make extra virgin olive oil only from Manzanilla Cacereña, the traditional variety of the hills.
The trees behind Vieiru organic grow without synthetic chemicals, in a mountain landscape where wildlife is still very present: birds, pollinating insects and native flora live alongside the grove.
Where Vieiru organic shines in the kitchen
- Salads.
- Grilled meats and vegetables.
- Extremadura-style migas.
- Country bread with a thread of oil.
Its balance makes it suitable for everything: a dressing, the grill or a slice of toast. In Extremadura cooking, migas with a good drizzle of Vieiru organic are the most natural pairing from its homeland.
The Sierra de Gata still holds many old terraced trees, tended by families who keep alive a demanding form of mountain farming.
