In the Jaén countryside the hills are covered in olive trees as far as the eye can see, and in Porcuna Picual is the queen of varieties. Growing it organically in such intensive olive country takes a special effort: Cañada del Avestruz does so without synthetic chemicals, and harvests early, while the fruit still holds all its green strength.

The oil

An early-harvest Picual with character. The nose brings green leaf and tomato plant; on the palate it is lively and persistent, with clear bitterness and pepperiness and a long, vegetal finish.
