The result is early harvest oils: the greenest, most aromatic and most intense oils of the year, and the most sought after by lovers of premium extra virgin olive oil.<\/p>\n\n<div class=\"key-points\">\n<p class=\"key-points-title\">In short<\/p>\n<ul>\n<li>An early harvest oil is made from green olives or olives at veraison, usually between October and early November.<\/li>\n<li>It is more intense: green fruitiness, herbaceous aromas and marked bitterness and pungency.<\/li>\n<li>It contains more polyphenols and keeps better than an oil made from ripe olives.<\/li>\n<li>It costs more because green olives yield much less oil per kilo.<\/li>\n<\/ul>\n<\/div>\n\n<h2>What \u201cearly harvest\u201d means<\/h2>\n<p>Olives change colour as they ripen: from deep green to yellowish green, then purple (a stage called <strong>veraison<\/strong>, <em>envero<\/em> in Spanish) and finally black. At the same time, the flesh builds up oil and the aromas evolve.<\/p>\n<p>An early harvest oil is made from olives picked at the start of that process, green or just beginning to turn. In southern Spain this usually happens <strong>between October and early November<\/strong>, weeks before the main harvest. Many mills also call it \u201cfirst harvest\u201d, <em>aceite verde<\/em> (green oil) or, when it is not filtered, <em>aceite en rama<\/em>.<\/p>\n<aside class=\"note\"><p>\u201cEarly harvest\u201d is not a legal category like \u201cextra virgin\u201d. To know what you are buying, look for the <strong>harvest date or season<\/strong> on the label and check the producer&#8217;s reputation.<\/p><\/aside>\n\n<h2>What early harvest olive oil tastes like<\/h2>\n<dl class=\"profile\">\n<div><dt>Colour<\/dt><dd>Deep green, often cloudy if unfiltered<\/dd><\/div>\n<div><dt>Aromas<\/dt><dd>Freshly cut grass, leaf, tomato plant, artichoke<\/dd><\/div>\n<div><dt>Bitterness<\/dt><dd>Medium to high<\/dd><\/div>\n<div><dt>Pungency<\/dt><dd>Robust, in the throat<\/dd><\/div>\n<\/dl>\n<p>It is a very different experience from an oil made from ripe olives, which is sweeter and smoother. The intensity also depends on the variety: an early <a href=\"https:\/\/xn--aceiteolivaespaa-lub.com\/en\/arbequina-olive-oil\/\">Arbequina<\/a> will be fresh and aromatic, while a <a href=\"https:\/\/xn--aceiteolivaespaa-lub.com\/en\/picual-olive-oil\/\">Picual<\/a> or <a href=\"https:\/\/xn--aceiteolivaespaa-lub.com\/en\/cornicabra-olive-oil\/\">Cornicabra<\/a> will be powerful with a long finish.<\/p>\n\n<h2>More polyphenols and better keeping<\/h2>\n<p>Green olives contain more phenolic compounds than ripe ones. These polyphenols are responsible for the bitterness and pungency, protect the oil itself from oxidation and are part of what makes extra virgin olive oil special. Green olives have not yet built up all their oil and contain more water, so it takes considerably more fruit to obtain each litre. Other costs add up too:<\/p>\n<ul>\n<li>Early harvesting is usually done in small batches and with more care.<\/li>\n<li>The olives are milled within hours, at a controlled temperature.<\/li>\n<li>Runs are limited and are often bottled in premium formats and gift boxes.<\/li>\n<\/ul>\n<p>That is why an early harvest oil usually has a higher price per litre. In our shop we always show the price per litre, so you can compare formats transparently.<\/p>\n\n<h2>How to enjoy it<\/h2>\n<ul>\n<li><strong>Always raw<\/strong>, where you can really appreciate its aromas: freshly baked bread, grated tomato, salads, carpaccio.<\/li>\n<li><strong>To finish dishes<\/strong>: a drizzle over a vegetable soup, pulses or chargrilled fish.<\/li>\n<li><strong>As a gift<\/strong>: early harvest gift boxes are one of the most appreciated food gifts of the season.<\/li>\n<li><strong>Use it within a few months<\/strong> of opening and keep it in a cool, dark place.<\/li>\n<\/ul>\n<p>If it is unfiltered, you will see sediment settle at the bottom over time.
